With the temps heating up, how perfect are these popsicles for a refreshing Apéritif?
Blackberry Prosecco Popsicle
20 oz Prosecco
1/3 cup of blackberries
4 oz crème de cassis
Splash of fresh lime juice
2 pinches of lime zest
1/3 cup of blackberries
4 oz crème de cassis
Splash of fresh lime juice
2 pinches of lime zest
Place blackberries in a bowl and pour crème de cassis on top. Toss to coat. Using a muddler or a rounded blunt end of a kitchen tool, crush berries into the crème de cassis. Add lime juice and zest, toss to combine.
Measure approximately 1 teaspoon of berry mixture into bottom of your chosen popsicle form and pour Prosecco on top.
Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight.
A few notes:
Do not remove from freezer until ready to serve as the carbonation in the Prosecco creates tiny air pockets that will make the popsicles melt faster.
Cordial glasses were used for the popsicles in the picture, but any form will work.
A little tip that I came up with for larger popsicles, to keep them from dripping on your hand as they begin to melt, I place a smaller size foil cupcake liner over the top of the glass prior to removing it.
Makes 12 2.5oz popsicles

Oh dearest one, THANK YOU for bringing over a cocktail for me as you strolled into only several rooms of my little château that I love….it is a simple brick cottage that underwent an addition of two rooms but mostly, the hard work of my husband who has hung chandeliers, torn open walls for French doors, ripped out bathtubs to build arched doorway showers and more….LOVE is the charge to make anything happen…HAVE A MAGNIFICENT DAY DEAR HEART!
