I hope you had a lovely weekend. My week flew by in a flurry but followed by a weekend of repose (thankfully!). Being in the last weeks of summer, I’m already missing it. It seems to have flown by too quickly, more so than usual. Would you agree?
I’ve mentioned before how much I love our Vitamix blender and this sorbet is a testament why.
Mango Sorbet with Limoncello
Ingredients:
2 ripe mangos, peeled, sliced and frozen
1/2 cup Limoncello
3 cups ice
Preparation:
In a Vitamix Blender (I’m certain other blenders will be fine), add the mango pieces, the Limoncello, and ice. Secure the lid and turn machine on high for 8 to 15 seconds. The sorbet will be incredibly smooth and creamy.
Serve with candid sour cherries or raspberries. Makes 8 servings, all within a few minutes. What’s not to love?
